200ml newly squeezed lemon juice
500g caster sugar

To make the Drink (produces 850ml, enough for 10)

Directions

To prepare the Cordial: Place the listed ingredients in a pot, bring to a gentle boil, agitating to dissolve. Next, remove from the stove and leave to reach room temperature completely. Decant into an sterilised bottle, cap it and store in the refrigerator, it will last for about a month.

Preparing the Cocktail Base: Mix all the liquids into one sizeable container, let it rest for 60 minutes, then filter it , ideally through a fine cloth, so it's fully clarified.

To serve: Pour 85ml from the premix to a mixing glass filled with ice, gently stirring lightly for about 60 seconds until cold. Strain to a cold coupe glass or similar, decorate with some cranberries and complete it using a quick spritz of mandarin oil over the drink.
